Mandarin and Citrus Sourcing
Sourcing is where a good winter lot is won or lost. Our buyers work with trusted orchards in the warm valleys that feed Xi'an and with growers in the southern citrus country, and they test the fruit before the box is ever sealed. A good mandarin for cold holding is firm of rind, clean of blemish and high in natural sugar, because sugar protects the flesh through a long sleep. We source tangerines, seedless mandarins, sweet oranges, pummelos and kumquats, and we sort by calibre so a bakery gets round fruit and a juice kitchen gets the sweetest pulp. Every sourced crate carries a note of its grove, its pick week and its brix reading, so our cold room and your kitchen both know what is inside.
